Story

We kept this lot a secret until the other lots were finished… surprise, it’s a pineapple co-ferment!

Despite Hester’s aversion to co-ferments, a few team members wanted to give it a try (that’s the beauty of diversity), so we decided to go for it and learned a lot along the way. 

We’re young producers, so experiments are important for us, and the hype around co-fermentation is huge. We set aside three bags for this experiment and sourced the pineapple from our own farm in Taferi Kela. After pulping the pineapples, we transported the juice to our Taferi Kela mill where we used the juice instead of water in an anaerobic fermentation process. It resulted in a clean cup profile with delicious tropical overtones. Maybe not for everyone, but definitely unique!

We really value these little experiments, especially towards the end of the season when everyone is tired. Trying something new or crazy is sometimes all you need to cheer the team up and have fun again. 

This lot sold immediately and is going to the USA, so we hope those who got it will enjoy it!
