Story

This is another experimental processing with cherries from our community farmers in Taferi Kela.

We wanted to try a pulped anaerobic washed, and it was a success! Just like with other lots, we developed a protocol for processing this coffee based on learning from many sources (such as other farmers, books, and YouTube), while keeping in mind our specific circumstances and what is actually possible. 

This one's similar to our honey anaerobic lot – after selecting cherries, we de-pulped them and left them in an anaerobic environment for a certain amount of time which we carefully tracked to control fermentation. Then, instead of immediately putting them on the drying bed, we washed them to remove the mucilage first (a challenge because of the cherries' stickiness at this point!), only then placing them on the drying bed.  

It created a great flavour profile that was well worth all the extra effort.
